Easy Date and Nut Roll

I like to rely on natural sugars in our baking and cooking. Think honey, maple syrup, rice malt syrup, fresh fruit and dried fruit like dates, figs, apricots, raisins and mulberries. So in an effort to create a heatlhy-ish sweet treat at home, here is a quick and easy date nut roll recipe. It is vegetarian, vegan and gluten free with all natural sugars in it.

Here I have minced Medjool dates only. However mixing it with dried figs or apricots is a good option . Then I chopped in nuts like almonds, cashews and pistachios and folded them in to form a log. Thereafter I covered the date nut roll in grated coconut. But you can roll it in raw cacao or good quality melted chocolate as well. And play around with whatever spices you fancy like cardamom, cinnamon and grated nutmeg. After chilling the roll in the freezer for a while, I used a sharp knife to slice it into circles . Very much like slicing chilled cookie dough. And that’s it. A quick fuss free dessert is ready.

Date Nut Roll Recipe

This is a healthy, dairy-free, refined sugar-free , vegetarian and vegan dessert recipe made with dates and nuts like almonds, cashews, pistachios

Ingredients
  

  • 250 g Medjool dates
  • 50 g almonds chopped
  • 50 g cashews chopped
  • 50 g pistachios chopped
  • 2 tbsp grated coconut

Instructions
 

  • Mash the dates with a fork in a bowl.
  • Fold in the chopped nuts in the dates mash.
  •  Roll the mash over a surface with grated coconut to form a log
  • Wrap in cling foil and freeze overnight
  • Before serving roll in some more grated coconut and cut thin round slices using a sharp knife

      Well thank you..it was chewy and soft and tasty at the same time .i also used a round piece of these to add to smoothies while blending ☺️
