There are a wide range of wholesome and unrefined ingredients now available for baking. These impart a very deep and nutty flavour to baked goods. When baking from scratch, the flours are an important component in baking. They provide structure to baked goods. The gluten and protein component plays an important role as well. So this must be kept in mind while providing adequate substitutions. Spelt flour is my favourite wholegrain flour of choice in baking. Among the gluten-free options, I have experimented with buckwheat flour , oat flour and almond meal. For refined free sweetness, I mostly use coconut palm sugar, jaggery or maple syrup.
