Late Night Trifle In A Glass

Ever had those late nights at home when you crave for something sweet? Yes I know just reach out for the cookie jar or have some hot chocolate. Or if you are lucky enough, you might stumble upon a slab of chocolate in the refrigerator. That has happened to me many times and I feel delighted to have found chocolate when I am least expecting it. Yes just like a little girl on some kind of a scavenger hunt ๐Ÿ™‚

However last night was different. I did not want to just have chocolate or a hot cup of coffee. (Coffee at night no ways especially at a time when I felt like indulging in something that would actually put me to sleep). No Christmas cookies or cakes either for me.ย  The glutton in me wanted something warm and nutty and sweet and savory and tarty – all together. And no fancy baking or cooking at such a late hour. Was I in a tantrum mood? I wish to think I wasn’t. So I have Jamie Oliver to my rescue (Yes like tons of people around the world I do watch him and his cooking and I am inspired by his recipes). I recollected a recipe I had read off his site and decided to experiment and get creative.

So what I concocted was based on a recipe of Jamie’s that I read on the Internet. First let me tell you what I made and how Jamie helped me. I took a small glass, crushed almonds and digestive biscuits (kind of like a crumble) and set it at the bottom of the glass. Then made a simple homemade vanilla custard (using eggs, milk, vanilla pod and sugar) that is exactly as seen hereย  This vanilla custard was poured over the digestive biscuit crumble. Then made a Rhubarb compote using 3 stems of Rhubarb, a small piece of grated ginger, 1 cup water and 1 tablespoon of sugar. Keep stirring this mix until reduced to half and the rhubarb is all squishy squashy. It is better to add lesser quantity of water since the rhubarb does leave water on its own. This warm compote was then poured over the vanilla custard.

What is the recipe I was inspired byย – For all you curious folks out there, click here to view it ๐Ÿ™‚ I did not have stem ginger (so used freshly grated ginger). I did not use vanilla yogurtย  (since I had my lovely vanilla custard) and I did not use orange zest (just wanted to stick to my tarty rhubarb).

So how did it turn out ? I made 4 glasses as seen below. Looks like a trifle and hence I like to call it “Trifle in a Glass”.

Was I satisfied with what I ate? The warmness of ginger, the nuttiness of almonds, the crumble of the biscuits, the sweetness of the custard, the tartness of rhubarb and the moist overall flavor of everything mixed together more than tingled my taste buds and satisfied by craving.

And of course I could not eat all of it at night. So refrigerated the glasses and when tasted it chilled in the morning, I felt it tasted even better ๐Ÿ™‚

    Yum! When you refrigerated it over night, did it still have the same consistency that morning? I never seem to have any luck when it comes to saving smoothies and shakes.

      Yes in fact it turned a little thick. It became more like souffle I must say. Perhaps owing to the egg and milky custard. ๐Ÿ™‚ When it was just warm it was a little more liquid.
