This Instant Pot apple cinnamon steel cut oats recipe is a quick and easy, healthy and vegetarian breakfast. It is dairy-free and refined-sugar free, filled with dietary fibre and complex carbs. Enjoy this nourishing warm breakfast porridge especially during the cooler months.
1/2cupnon-dairy milk of choice(almond milk, oat milk)
1tbspchia seeds
1tbspmixed seeds of choice goji berries, pumpkin seeds, sunflower seeds
1tspmaple syrup or honeyoptional
1tbspnut butter of choiceoptional
Instructions
In an Instant Pot combine the oats, water, cinnamon powder and grated apple. Set on porridge for 12 min high pressure setting
Once 12. min are completed, pour over the cooked oats in bowls and add chia seeds and oat milk or almond milk (as per choice). Wait for a few minutes until the chia seeds start to soak up the additional liquid .
Once the chia seeds have soaked in the extra liquid, put toppings of choice i.e. mixed seeds, nut butter, slices of fresh apple and serve
Notes
For stove top method : In case you don't have an Instant Pot of slow cooker, then just cook the oats, water, cinnamon powder and grated apple in a deep sauce pan on a stove top for 20-25 minutes. Keep adding additional water and keep stirring to ensure it doesn't stick to the bottom of the pan and is thoroughly cooked.
