And just like that, April 2020 ended. I am pretty sure no one is going to miss it. Not that I expect too much going into May, but I hope things start getting better. Talking of good things, Mother’s day is just around the corner. However with social distancing in place, I know celebrations will look different this year. I do feel we can still make our mums feel special despite all the craziness that Covid-19 is bringing upon us. So here I share the best Mother’s day breakfast of an easy french toast that you can whip up at home for Mum to make her feel like a superstar. This french toast recipe is dairy-free. It can be made eggless as well. Read on below!

I will be sharing few Mother’s Day recipes this week with bread as the base using my beginner’s easy bread recipe that I shared last week. These homemade recipes are quick and easy, using fuss-free pantry ingredients and will make you look like a trained chef. I am using bread as the theme for all my Mother’s Day recipes. My mum was very picky about the bread she ate. She always bought freshly baked bread loaves from the “Royal Bakery“, a Parsi bakery in Pune. Thereafter she used the bread to whip up delicious sandwiches, salads, toasties etc of all kinds. Now that Mum is no longer with us, I felt it apt to pay a tribute to her through recreating and sharing her favourite bread based recipes. Further bread is a basic necessity helping everyone connect to their roots during this pandemic. So good reason to include it in cooking.

What is French Toast and its variations?

The most basic french toast or eggy bread comprises soaking slices of sandwich bread (mostly stale or day old) in a mixture of beaten eggs, milk, sugar and spices like vanilla/cinnamon. Then pan-fry the soaked bread slices on each side for a few minutes. And finally serve the French toast with fruit, honey and whipped cream. However different countries have their own variations. Some countries don’t use eggs while others don’t use milk. Few places serve it with only honey or a sweet syrup. While others serve it with fruit or make it savoury. You will find countless variations of the sauce and servings on the Internet. However I am sticking to the basics in this french toast recipe while still trying to make it look posh for your Mother’s Day breakfast.

Severing suggestions for Mother’s Day breakfast with easy French Toast

In this recipe I make a quick mixed berry compote. Frozen or fresh berries work just fine. Further I list few sweet and savoury serving suggestions for this easy French toast breakfast. Depending on where you live, you may not have access to all these ingredients. So I am trying to list as many options as possible. For the drink, black coffee is just my preference. But you can of course serve it with your choice of beverage.

Making French Toast eggless and/or dairy free

In this recipe, I use eggs and almond milk (hence making it dairy free). One can also use Oat milk. To make it eggless and hence vegan, substitute one egg to a flax egg. A flax egg is nothing but 1 tablespoon ground flax powder mixed in with 3 tablespoons of water. The flax will however make the batter bitter. So add in a heaping spoon of liquid sweetener of choice. Maple syrup or honey work best.

Best Mother’s Day Breakfast Easy French Toast Recipe

This is a quick and easy French Toast recipe that is dairy-free and can be made eggless. It is vegetarian and vegan friendly. Enjoy it for breakfast or brunch.

Ingredients

  • 4 slices sandwich bread Day old or stale bread is better
  • 250 ml Almond milk or Oat Milk App. 1 cup.
  • 2 medium eggs whisked
  • 1/2 tsp cinnamon powder
  • 1/2 tsp vanilla extract
  • 1 pinch salt
  • 2 tbsp olive oil For pan frying the french toast

For the Berry Compote

  • 200 grams mixed berries fresh or frozen
  • 2 tbsp liquid sweetener of choice Maple syrup or honey
  • 1 tsp grated lemon zest

Instructions

  • In a large mixing bowl, whisk in the eggs, almond milk, vanilla , cinnamon powder and salt. Beat for a few minutes until the mixture turns frothy and pale yellow
  • Heat a frying pan on medium low heat and add in the olive oil.
  • Dip the four slices of bread in the eggy mixture until the bread starts soaking in the liquid and is well coated on both sides
  • Quickly place the 4 slices on the frying pan. Start to pan-fry 2-3 minutes on side. Then flip over to the other side and repeat. If your pan is small, then work 1-2 slices at a time.
  • Once the coated egg mix starts cooking, it will turn golden brown . When it does, you know the bread is cooked.

For the Berry Compote

  • In a sauce pan add in the mixed berries, liquid sweetener and grated lemon zest. Cook for a few minutes until the berries start to break down and a squishy jammy texture starts to form.
