Broccoli Soup

Broccoli is a wonderful vegetable. It has a plethora of health benefits – lowers your cholesterol especially when steamed, detoxifies your body, an excellent source of vitamin D, lessens the impact of allergy causing substances in the body – I could rant away at its benefits. However most of all I enjoy the beautiful green color. And making this broccoli soup for easy weeknight dinners.

This soup is really simple. It uses the freshest ingredients and does not require too much time. I find this soup ideal for a light weeknight dinner. It is great on those weeknights when you want a quick warming, nourishing and tasty soup. (This is NOT the powdered soup packs to be boiled using hot water).

Interesting Facts on Broccoli Soup Ingredients

Onions help lower the blood sugar, good for your heart and gastro-health. The reddish pink onions are stronger in flavour but have the greatest anti-oxidant content compared to the milder white onions. Also they have anti-inflammatory and anti-bacterial properties.

Garlic helps lower blood pressure and high cholesterol. It also has anti-bacterial and anti-fungal properties. Onions and garlic together may reduce certain cancers. So besides the taste some more reasons to enjoy this soup 🙂

For the toppings, I like to use almond flakes and blue cheese. One may find blue cheese very pungent but those who like it, it gives a nice punch to the blandness of broccoli. You can also use feta instead. Feta itself is very salty so ensure you add less salt in the soup to avoid a very salty soup.

Equipment

Ingredients

  • 1 large broccoli cut into florets, including stems
  • 1 medium onion chopped
  • 5-6 cloves garlic smashed
  • 1 cup vegetable stock App. 250 ml
  • 1 tsp dried or fresh herbs of choice See notes
  • 1 tbsp extra virgin olive oil
  • 1 tsp sea salt as per taste
  • 1 tbsp Almond flakes optional topping
  • 20 grams crumbled feta or blue cheese optional topping

Instructions

  • Blanch the broccoli (including stems) after cutting it into small florets in hot boiling water
  • Then add in the oil in a deep sauce pan and saute the chopped onions, garlic and herbs for few minutes until the onions turn translucent
  • Blend the blanched broccoli, veg stock and onion-garlic-herb mix( from above step)in a high speed blender to make a thick puree. Add in additional water as desired to bring it to the consistency of your choice
  • Heat the blended mixture and stir well for a few minutes more on a low-medium heat
  • Serve the soup in bowls with a slice of toasted bread and toppings of your choice (almond flakes, crumbled feta/blue cheese, black pepper)

Notes

On herbs: A spoon of mixed dried Italian herbs will be sufficient. Otherwise use fresh herbs of choice e.g. thyme, rosemary, oregano
