Instructions
Blanch the broccoli (including stems) after cutting it into small florets in hot boiling water
Then add in the oil in a deep sauce pan and saute the chopped onions, garlic and herbs for few minutes until the onions turn translucent
Blend the blanched broccoli, veg stock and onion-garlic-herb mix( from above step)in a high speed blender to make a thick puree. Add in additional water as desired to bring it to the consistency of your choice
Heat the blended mixture and stir well for a few minutes more on a low-medium heat
Serve the soup in bowls with a slice of toasted bread and toppings of your choice (almond flakes, crumbled feta/blue cheese, black pepper)
Notes
On herbs: A spoon of mixed dried Italian herbs will be sufficient. Otherwise use fresh herbs of choice e.g. thyme, rosemary, oregano
