Sandwiches were my mother’s jam. She claimed making hearty and healthy sandwiches “saves time, money and is an easy way to consume lots of veggies“. My mum made weekly batches of tomato, onion and mint-coriander chutneys. She then slathered the chutney and some butter on thick slices of bread. Further she chopped and lay down whatever veggies were on hand like cucumbers, tomatoes, carrots and boiled beets. For the more hungry meals, she added in boiled eggs or even mashed chickpeas/black eyed beans/kidney beans. She showed us sandwiches done right. As part of my posts for Mother’s Day lunch, this Club Sandwich without Mayo is my tribute to my Mum’s ultimate sandwiches.
As I mentioned in my previous post on the best french toast for a Mother’s Day breakfast, I will be sharing few Mother’s Day recipes this week with bread as the base (recipe from my beginner’s bread). I also mentioned previously how my mum loved a good fresh loaf of bread. So I will try to recreate and share her favourite styles of bread based recipes here. Besides this Club Sandwich looks posh, uses easy to buy fresh wholesome ingredients and wows anyone biting into them. It is a club sandwich without mayo and without any meat. What’s not to love here?

What is a Club Sandwich?
Also called a Clubhouse sandwich, the Club sandwich is just toasted slices of bread with layers of spreads, cheese, pickles , lettuce and meats like turkey or chicken. Most versions have 2 slices of bread separated by an additional third slice of bread so that this bread slice absorbs in the additional fillings. I found this good link on the history of the club sandwich with the most popular theory of its origination from a club house in New York.
Ingredients to make my meatless Club Sandwich without Mayo
Most club sandwiches are made with mayo. I am not a fan of mayo. Not even homemade mayo. There are many things that can help create the same creaminess that mayo does. So here I use good old hummus and top it up with beets on one slice. On the second slice, I smashed avocado with a generous pinch of sea salt and topped it up with slices capsicum aka bell peppers. Finally on the third slice, I added in mushrooms sautéed in thyme and olive oil topped with a few shavings of hard cheese. This creates creamy layers that are not too wet to make the sandwich soggy. Also the vibrant veggies give adequate colour to make for a gourmet Club Sandwich lunch.
Suggested sides for a Club Sandwich
Serve a Club Sandwich with crinkle cut potato fries or chips. I love to roast sweet potato wedges with smoked paprika to serve with sandwiches as well. Always look for a tomato based saucy dip or chutney to serve.
Gluten-free, Dairy-free, Vegan options
If you have gluten intolerances, you can always use a gluten-free bread or even make lettuce cups. This will also make the recipe low-carb. ( I love my bread so I won’t be able to give it up just yet 🙂
To make the Club Sandwich completely dairy free and vegan, skip the shavings of hard cheese on the sautéed mushrooms. Otherwise it is completely vegetarian.
Scaling the recipe and storage Instructions
Store the sandwich wrapped in thin foil or a brown paper bag. However it is best consumed when fresh to enjoy the beautiful colours. To scale the recipe, you just require to increase the fillings for the sandwich.

Meatless Club Sandwich without Mayo Recipe
Ingredients
- 3 slices Sandwich Bread toasted
- 1 tbsp hummus (I used the basic Hummus recipe from Ottolenghi. See link below. )
- 1/2 medium avocado mashed
- Few slices green or red peppers
- Few slices boiled beetroot
- 3-4 medium button mushrooms sliced
- 1 tbsp olive oil
- 1 sprig thyme Or use dried mixed Italian herbs
- Few shavings Hard Cheese (I like sharp cheddar or pecorino)
Instructions
- Prepare the hummus as per the basic hummus recipe posted below. This can be made before hand and stored in the refrigerator.
- Toast the 3 slices of bread. Generously smear hummus on one slice and add in the sliced bell peppers / capsicum . Add the smashed avocado and sliced beets on the other slice.
- Separately sauté mushrooms in olive oil and thyme for a few minutes until the mushrooms shrink in size. Place the mushrooms on third toast and top with cheese shavings (if using them)
- Assemble the sandwiches or serve as open toasts with chips of your choice.
