This marble cake recipe is definitely one of the simplest and fool proof “baking from scratch” recipes you can find. If, like me, you are looking for 1) a quick and easy cake recipe, 2) using only pantry staple ingredients, and 3) a cake to impress a crowd , this is the recipe you want to save. This cake uses basic baking ingredients i.e. flour, butter, sugar, eggs, vanilla and cocoa powder. The final cake has a streaked or rippled appearance owing to the layers of vanilla and chocolate cake intricately laced together. Once cut, the slice of cake looks like a slab of marble, hence the name “Marble Cake”. In fact, I baked this marble cake as my very first cake when I started baking.
This marble cake recipe also happens to be a family recipe that Mum taught me. It was the most baked cake in our house for any family gatherings, parties or events. All my friends loved it – So much that it is perhaps the “most requested cake” till date. I have known this recipe for over 25 years and it is just so wonderful to bake it over and over again. So here goes the recipe for this lovely cake filled with the sweetest memories of my mum and childhood.
Serving Marble Cake
The marble cake is a soft pound cake style bake filled with buttery goodness. The alternating vanilla and chocolate flavour in a single slice will leave you wanting more. It has a lovely crumb and is not too sweet. I enjoy this as a coffee cake served with tea (or beverage of your choice). For a slightly more decadent version, pour over some melted dark chocolate once baked and slightly warm.
I haven’t tried making this cake vegan or dairy-free, so would not be able to advise you on how that could be baked.

Marble Cake Recipe
Equipment
- oven
- Stand mixer or Whipping blade in food processor
- 25 inch square or round baking pan
Ingredients
- 250 grams Flour (I prefer spelt flour)
- 200 grams Brown sugar of choice (Rapadura, Coconut sugar)
- 200 grams unsalted butter (At room temperature)
- 4 medium Eggs (preferably free range/organic and at room temperature)
- 1 tsp baking powder
- 1 tbsp vanilla extract
- 2 tbsp raw cacao powder
- 1 tsp lemon juice
- 100 grams chopped walnuts
Instructions
- Preheat the oven to 180 deg centigrade
- Cream the butter and sugar together until they turn pale yellow
- Add in each egg one at a time and continue whipping until the butter-sugar-egg mixture turns light and fluffy.
- Separately mix in all the flour and baking powder. Then slowly start to mix it into the wet butter-sugar-egg mixture. Continue whipping until the cake batter turns light and fluffy
- Divide the batter into 2 parts. In one part put in the cocoa powder and chopped walnuts to make the chocolate batter and the second part add in the lemon juice + vanilla extract
- Mix each batter in their respective bowls until well combined
- In the baking pan of choice, pour in one spoon of vanilla batter and spread it evenly. Then pour in one spoon of the chocolate batter. Keep alternating with each batter – spoon after spoon until all the batter is over.
- Then bake in a preheated oven until a skewer comes out clean
