Quick and Easy recipe for a Club Sandwich without Mayo. It is vegetarian and is vegan friendly. Enjoy for lunch or dinner on busy weekdays (weeknights)
1tbsphummus(I used the basic Hummus recipe from Ottolenghi. See link below. )
1/2mediumavocadomashed
Fewslicesgreen or red peppers
Few slicesboiled beetroot
3-4mediumbutton mushroomssliced
1tbspolive oil
1sprigthymeOr use dried mixed Italian herbs
FewshavingsHard Cheese(I like sharp cheddar or pecorino)
Instructions
Prepare the hummus as per the basic hummus recipe posted below. This can be made before hand and stored in the refrigerator.
Toast the 3 slices of bread. Generously smear hummus on one slice and add in the sliced bell peppers / capsicum . Add the smashed avocado and sliced beets on the other slice.
Separately sauté mushrooms in olive oil and thyme for a few minutes until the mushrooms shrink in size. Place the mushrooms on third toast and top with cheese shavings (if using them)
Assemble the sandwiches or serve as open toasts with chips of your choice.
