A quick and easy breakfast bake that is vegetarian and vegan friendly. Make it in big batches and use it for meal prep. It is nutrient dense, fibre rich, filled with complex carbs, proteins and good fats to kick start your day (oats, nuts, quinoa, spices and plums)
10-12mediumfresh plums quartered and stones removed
1/2cupquinoa soaked overnight
1/2cupnuts and seeds (of your choice) soaked overnight
3tbsprolled oats
2tbspoilcold pressed extra virgin coconut, almond, macadamia or olive oil work best
1/2tspcardamom seeds crushed
1/2cupMilk of choiceSee notes on Milk
Instructions
Pre heat oven to 180 deg centigrade
Layer the quartered plums in a baking tray / pan
Wash and drain the quinoa , nuts and seeds before scattering them all over the fruit.
If adding milk, add at this stage.
In a separate bowl, toss the rolled oats in the oil and crushed cardamom seeds.
Then spread over the oats mix onto rest of the ingredients in the baking pan
Bake in a pre-heated oven for 20-25 min at 180 deg centigrade until the top is golden brown and the aroma of the bake starts spreading out. Bake a little longer if using milk until it is fully cooked through.
Serve as is or with fresh yogurt. Leftovers keep in the fridge and can be warmed in a pan the next day.
Notes
Note on Milk : I normally like to use a dairy free milk such as Almond of Oat Milk. However a good cows milk works just fine.
